Example of extending core views

Are there any examples of modules/apps that extend the functionality (e.g. override views/blades) of core components?

I would rather not be changing core files to make changes to things like templates or core views.

Thanks for that. Is there any documentation on extending a model to add a new field? I realise that this is the kind of functionality offered by the Custom Fields feature. But the lack of a demo / trial for apps means it is a bit hard to confirm that it is or isn't going to do what I want.
