can we update software anytime on live

Hello,
I am highly wondering - what would happened if we are opening the accounting software from browser from different place while we are updating the accounting software on live? Does this crack the software? What would happen if someone is entering the data while updating. I will highly appreciate it.

I update the software whenever there is a new release on shared hosting . From reading the forum posts when skipping a few versions and ten update, you may run into some challenges.
