How can I send a customer a statement of their account?
They get behind on payments and I need to send them a statement of what they owe in total.

There is no ready report for that right now. The easier would be to activate an access to them on the Portal.

Check Sales > Customer > Check "Can Login" then creates a password to them. They can access with the email registered on their profile and the password you just created.

Will they be able to see my complete profile if they are able to login or just their own account?

Only Their Account and related documents such Invoices Bills Payments etc

This is very important requirement, any software should include statement of account for both Accounts Receivable (Client) and Accounts Payable (Suppliers)
I hope you will mention here when you will make this option available.

I hope the developers of Akaunting take the advice of auditors and accountants before designing any apps or any solution, it is very obvious that Akaunting software is done by developers don't have strong experience in accounting, or they didn't take the advice of accountants and auditors.
Really the structure of program should be redesigned as it is insane to make app only for statement of account related to customer
In all my career (23 years) I always see the decent software programs having a tool called "report designer" to enable the users to design their own reports
Please rethink about your strategy, and it will be pleasure to advise you about the best structure will be fit the accountants and auditors for any accounting software.
