Using Akaunting and setup

I have setup these categories under Items;
Accommodation
PADI Courses
Scuba Diving
Sales & Retail
Rental
Transfers
Each category have several different ones under each item. Example I sell two different kind of rooms in our resort. Plus some extra deals so under Accommodation their are 5 different items.

What's confusing me is under items as the different categories, income there are Sales and Deposit only when I start up. So if I use these two only they will show up under categories on my invoice.

But I would like to see me specific information regarding where my income is from, not only from sales or deposits. I would like to see how my income looks like from each and every item I have setup up. How do I make this so it looks good and simple to work with.

I am new to Akaunting, just migrated from Wave Accounting.

Too Clarify a little, These are my main categories under items;
Accommodation
PADI Courses
Scuba Diving
Sales & Retail
Rental
Transfers

Having it like this then I can pick my products directly when I making an invoice. We have always had this in Wave, this since our products hardly ever change. I have around 90 different items there.

Each of these items goes under what I consider to be our income;
Accommodation
PADI Courses
Scuba Diving
Sales & Retail
Rental
Transfers
But in Categories the income is set to Sales and Deposits. If I would use these as income categories,
Accommodation
PADI Courses
Scuba Diving
Sales & Retail
Rental
Transfers
It will not work since our invoices are mixed with diving, accommodation and maybe transfers and so on. So what is the best setup here for us using this? I just want to see how much each income gets in the yearly end. Same as you would like to do with your expenses in the end of the year.

You can create unlimited categories from the Settings > Categories page. Here you can find the docs:

Hello Denis!
Yes I know, I have read all day long about these thing. Categories is not the real problem here, accounts are and I have found out that Akaunting is only Single Entry Accounting. I would need something more comprehensive for my business accounting.

Buying an App is not a problem, But buying several Apps are. Then I might as well go with QuickBooks and pay the monthly fees. It would be the same in the end of the day for us unfortunately.

Dont get me wrong I do like the setup, very nice everything. And it is very simple and easy to use. But Single Entry is not for me since I need to know more about my accounting. I am not an accountant, but I have been doing this for a long time now. I have been using Wave Accounting for the past 10 years or so. And I need something that are the same.
