What the minimum environment settings that are required for Akaunting for perform properly (update for example)?

It will depend on how much data and clients you have. If they will have access to the portal or not.. how many users using the system on the same time also impacts the perfomance..

As far as i know, Akaunting has docker images, that runs on very lightweight environments available.
